Tabbouleh 
Ingredients
- 3 cups finely chopped flat leaf parsley
 
- 2 spring onions, finely chopped
 
- 1/4 cup fresh mint leaves, finely chopped
 
- 1 large tomato, finely chopped
 
- 2 green chili peppers, finely chopped (optional)
 
- 2 tbsp. cracked wheat (bulgur)
 
- Lemon juice, to taste
 
- Salt, to taste
 
- 3 tbsp. olive oil
 
Directions
- Finely chop the parsley, mint, spring onions, chili peppers and tomato.
 
- Rinse the crushed wheat and drain well then soak in 2 tbsp. of lemon juice for 30 minutes.
 
- In large mixing bowl, combine all the ingredients including the crushed wheat and the lemon juice and salt
