Mayonnaise with garlic

Mayonnaise with garlic (Toum)



Ingredients

  • 2 cup cold water
  • 1 cup corn starch
  • 1 clove garlic, peeled
  • 1 large  tbsp. lemon juice (adjust to taste)
  • 1 small tbsp salt
  • ½ cup cooking oil
  • ½ cup cold water for mixing in food processer

Directions

  1. Mix the corn starch and water in a pan and cook on medium heat until it thickens.  Turn off the heat and allow to cool for a few minutes.
  2. In a food processor, combine the garlic , ½ cup cold water, salt, lemon juice and the corn starch mixture and process.
  3. Slowly drizzle the oil (while processing) until you have a smooth paste.
  4. Can be used immediately or stored in the fridge.
