Mayonnaise with garlic (Toum)
Ingredients
- 2 cup cold water
 
- 1 cup corn starch
 
- 1 clove garlic, peeled
 
- 1 large  tbsp. lemon juice (adjust to taste)
 
- 1 small tbsp salt
 
- ½ cup cooking oil
 
- ½ cup cold water for mixing in food processer
 
Directions
- Mix the corn starch and water in a pan and cook on medium heat until it thickens.  Turn off the heat and allow to cool for a few minutes.
 
- In a food processor, combine the garlic , ½ cup cold water, salt, lemon juice and the corn starch mixture and process.
 
- Slowly drizzle the oil (while processing) until you have a smooth paste.
 
- Can be used immediately or stored in the fridge.
