Greek Salad
Ingredients
- 2 large plum tomatoes, cut into wedges
- 2 small cucumbers, sliced
- 1/2 small red onion, cut into thin rings
- 1 cup bell peppers (one or more colors), cut into bite size pieces
- 1/2 cup kalamata olives, pitted
- 1/2 cup feta cheese
- 2 tbsp. chopped fresh mint (optional)
- 1/2 tsp. dried oregano
- 4 tbsp. olive oil
- 1 - 2 tbsp. lemon juice
- Salt, to taste (salt may not be needed as the cheese and olives are salty enough)
Directions
- In a large bowl, mix the oil, lemon juice, oregano and salt.
- Combine all the salad ingredients except the cheese and toss to coat dressing.
- Top with the diced cheese and serve as a side dish or light meal with crusty bread.
